Grilled Cheese and Tomato Soup
Ingredients:
For the Tomato Soup:
- 2 tbsp olive oil
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1 can (28 oz) crushed tomatoes
- 2 cups vegetable broth
- 1 tbsp sugar
- 1 tsp dried basil
- Salt and pepper to taste
- ½ cup heavy cream (optional)
For the Grilled Cheese:
- 4 slices of bread (sourdough or white bread works best)
- 2 tbsp butter, softened
- 4 slices of cheddar cheese (or your favorite cheese)
Instructions:
Ladle the tomato soup into bowls and serve with the grilled cheese on the side for dipping.
Make the Tomato Soup:
Heat olive oil in a large pot over medium heat. Add chopped onion and garlic, and sauté until softened, about 5 minutes.
Stir in crushed tomatoes, vegetable broth, sugar, and basil. Simmer for 20 minutes to blend the flavors.
Use an immersion blender to blend the soup until smooth (optional). Stir in the cream, and season with salt and pepper to taste.
Prepare the Grilled Cheese:
Spread butter on one side of each bread slice. Place 2 slices of cheese between two pieces of bread, with the buttered sides facing out.
Heat a skillet over medium heat and cook the sandwiches for 2-3 minutes per side, until golden and the cheese is melted.
Serve: Ladle the tomato soup into bowls and serve with the grilled cheese on the side for dipping.
