1 lb (450g) ground beef (or substitute with ground turkey or plant-based meat)
1 medium onion, diced
2 cloves garlic, minced
1 can (15 oz) diced tomatoes, undrained
1 can (15 oz) tomato sauce
1 can (15 oz) corn, drained
1 can (15 oz) pinto beans, drained and rinsed
1 can (15 oz) kidney beans, drained and rinsed
1 can (10 oz) diced tomatoes with green chilies (like Rotel)
4 cups beef or vegetable broth
1 tsp chili powder
1 tsp ground cumin
1/2 tsp smoked paprika
Salt and pepper to taste
1-2 cups diced potatoes (optional)
1-2 cups water (if needed to adjust consistency)
Cowboy Soup Recipe Instructions
Brown the Meat: In a large pot or Dutch oven, cook the ground beef over medium heat until browned. Drain excess fat if needed.
Add Onion and Garlic: Add the diced onion and minced garlic to the pot. Cook until the onion becomes translucent, about 3-4 minutes.
Add the Remaining Ingredients: Stir in the diced tomatoes, tomato sauce, corn, pinto beans, kidney beans, diced tomatoes with green chilies, and broth. If you’re using potatoes, add them now too. Season with chili powder, cumin, smoked paprika, salt, and pepper.
Simmer: Bring the soup to a boil, then reduce the heat to low. Cover and let it simmer for 25-30 minutes, or until the potatoes (if added) are tender and the flavors meld together.
